Elmhurst 1925 is a non-dairy beverage made from whole nuts.

What Is Milked?
Milked (verb): to draw something from. The work “milked” best describes the unique process of using water to separate and draw out the nutrients from the nuts. These valuable nutrients, once released, re-combine naturally to make a very creamy and smooth beverage without the use of any added emulsifiers or thickeners. Elmhurst's process allows them to use more nuts, which means a more delicious and nutritious nutmilk. Free from: gluten, dairy, soy, lactose, high-fructose corn syrup, carrageenan or any other gums, stabilizers, or emulsifiers.

Roasted Pumpkin Hazelnut Risotto

Ingredients:

3 cups Elmhurst Milked Hazelnuts
1½ cups Arborio Rice
½ cup Onion, Chopped
1 Tbsp. Garlic, Minced
8-oz. Canned Pumpkin Puree
½ cup Feta Cheese
½ cup Radicchio, Sliced
2 tbsp. Sage, Chopped
1 tbsp. Vegetable Oil

Directions:

  1. Preheat oven to 350°F.
  2. On a greased baking pan, spread out the pumpkin puree evenly.
  3. Bake for 12-15 minutes or until the pumpkin starts to turn golden brown.
  4. In a large sauté pan, heat the vegetable oil and add onions. Sweat the onions until translucent.
  5. Add the garlic to the pan and sauté for another minute.
  6. Add the Arborio rice to the pan and toast for about 2 minutes.
  7. Add 1 cup of the Elmhurst Milked Hazelnuts, stirring constantly so that the rice does not stick to the bottom.
  8. Once almost all the liquid has been absorbed, repeat step 7 two more times, until all the Elmhurst Milked Hazelnuts has been soaked into the rice.
  9. Add in the radicchio and let it cook for 2-3 minutes while stirring constantly.
  10. Stir in the pumpkin, feta cheese, and sage, serve immediately.

I loved it. Tried the almond milk. Was great plain and used in cereal. I also made banana smoothies with it and my picky kids loved it. I would love to try more flavors.

Me and my daughter tried the peanut chocolate and we loved it. The flavor is awesome!!! I cant wait to try the other flavors and I'm not much of a milk drinker.

I am sorry to say that I did not like this unsweetened almond milk. I have made my own unsweetened almond milk, and I have tried other brands. Neither tasted like this does. My favorite brand is Califia. I poured some of this into a glass, and in my opinion it just tastes weird. Before I tried it, I liked that it only had two ingredients, but I will not drink the rest of it. I would like to add that I’m not really a picky person either when it comes to food. Also I think the price in the store was kind of steep for the quantity.

I love this brand! I've tried both the almond milk and the cashew. I tried the unsweetened versions and I love them. I use them in cereal, in coffee, for baking etc. I definitely recommend.
