Bananamo Bread

Dry Ingredients

  • 2 cups (500 ml) all-purpose flour
  • 1/2 cup (125 ml) brown sugar
  • 1/4 cup (60 ml) white sugar
  • 1 tbsp (15 ml) baking powder
  • 1 tsp (5 ml) baking soda
  • 1/2 tsp (2 ml) salt

Wet Ingredients

  • 3 eggs, beaten
  • 1/2 cup (125 ml) sunflower or other neutral tasting vegetable oil
  • 1/2 cup (125 ml) Veggemo Vanilla
  • 1 tsp (5 ml) white vinegar
  • 2 cups (500 ml) mashed very ripe bananas (about 4 large bananas)

Directions

1. Preheat oven to 350F/175C.

2. Sift all Dry Ingredients together.

3. Beat all Wet Ingredients together with an electric mixer until smooth. On low speed, fold in Dry Ingredients just until mixed.

4. Pour batter into parchment-paper lined loaf pans and bake until toothpick inserted in middle comes out clean, about 45 minutes. Cool in pan 10 minutes. Remove cake from pan and cool on wire rack.

Really wanted to like this but it was just slightly off. Texture was similar to a soy milk but it had an off taste I couldn't get past. It was ok in cereal but that is about it.

I thought this was ok. Not extremely sweet but more so than I expected. The consistency is different than milk but that was fine for me since I was using it in hot tea and coffee, not drinking it straight. I don't generally use milk products except in tea & coffee and, once in a while, when it's called for in cooking or baking. I used a little of the veggemo when I made home made mac & cheese (in addition to milk) and couldn't discern any difference in the mac & cheese when we ate it. All in all, I might purchase this product again if I had a coupon or it was on sale.

I dont use any sort of milk too often, but this worked nicely in smoothies. I didn't love it alone or with cereal though. The taste wasn't my favorite.

I think it is a good replacement in a pinch. It is very easy to use and very convenient for different recipes. I recommend it for easy use..
