Mexican Avocado Linguine

Ingredients:

  • 250g skinnypasta™ HIGH PROTEIN Linguine
  • 3 ripe avocados, halved and pitted
  • 1 cup black beans
  • 1 medium red onion, finely chopped
  • Lemon juice from 1 lemon
  • Lime juice from 1 lime
  • 2 garlic cloves, peeled and thinly minced
  • 1/8 tsp cayenne pepper
  • 1/2 cup extra virgin olive oil
  • Handful fresh cilantro, torn or chopped
  • 1/2 tsp coarse salt
  • Feta (optional)

Method:

  1. Take halved and pitted avocados and lightly brush with olive oil. Cook on BBQ or on the oven rack at medium heat, face down and with the peel still on. Remove avocados once they are nicely charred and softened. Set aside to cool until you are able to pick them up without burning your fingers.
  2. In a strong blender or food processor, add lemon and lime juice, cilantro, salt, cayenne pepper and one minced garlic clove. Add the cooled avocados, scooped out of their peels with a spoon. Puree the mixture while slowly drizzling in olive oil. Add more salt and lemon/lime juice to taste. The mixture should be thick.
  3. Meanwhile, in small sauce pan over medium heat, sauté the red onion and the other minced clove of garlic with a small amount of olive oil. Once the onion and garlic are soft, mix in black beans and leave on low heat to simmer.
  4. While the mixture simmers, bring water to a boil in a pot and add 250g skinnypasta HIGH PROTEIN Linguine to boiling water, gently stir pasta to separate and test for doneness after one minute, strain.
  5. Next, add the avocado sauce to the linguine in the pot by small spoonful’s, gently tossing with the pasta, coating each pasta strand. While tossing, add in the fresh basil and parsley leaves, with an extra pinch of salt and pepper.
  6. Serve with a large spoonful of the beans and onions placed on top, with extra cilantro and lemon and lime wedges for those who want an extra citrus kick. Ole!

I had the GLUTEN FREE Roasted Vegetable Lasagna. I did like the consistency and the great taste. they were done in no time. And I like the clean ingredients!

I tried the gluten free roasted vegetarian lasagna. On the plus side... it had a ton of cheese! On the downside there were few vegetables or filling of any kind. The noodles were chewy and the whole thing was bland. I found it very heavy. It sat in my stomach like a rock. I immediately regretted eating it afterwards.

For being a low carb pasta, it was actually fairly tasty! Nice full flavor, not too dense of a chew. The pasta held sauce really nicely, and it was a delicious meal.

A tasty pasta, low in calories and GMO-Free. Easy to cook, you can enjoy the taste and be sure that you won't add more calories. The pasta is fresh too . I recommend it.

YUM. Good thing this pasta is low in calories, because I could not stop putting it into my face. Great flavour, great texture, great pasta. Now I just need to come up with enough different sauces so i can eat it every night....
