Lemon-Cream Icebox Cake
With a fork, stir sour cream, cream cheese and lemon curd together until smooth and silky.
Mix 2 tsp. lemon juice with the cornstarch.
Bring remaining lemon juice to a boil, add cornstarch mixture and boil for one minute while stirring vigorously. Let cool for 5-7 minutes, then carefully fold into cream cheese mixture.
To build the cake, place one cookie on the center of the serving plate. Place the other 6 cookies in a circle around it, with edges touching. (It helps to dab a tiny bit of lemon cream underneath each cookie to keep the cake from sliding around as you work.)
With a spatula, spread a thin layer of lemon cream over all cookies. Place another layer of 7 cookies on top of the first layer, offsetting the cookies, rather than stacking directly on top of each other. Continue layering cookies and lemon cream until cake is the height you like, finishing with a layer of lemon cream on top.
Place cake in refrigerator overnight.
It was good for me because I am lactose intolerant. I buy bagels all the time and I have to find lactose free cream cheese all the time. Now I have tryed it I buy it again
I didnt like the consistency of this product. A friend of mine who also tried it said that the flavor is one of the best that she has tasted, but agreed that it looked a bit off
Couldn’t really try this because it wasn’t vegan. I’m sure it’s good if you’re looking for a product that is organic. So unfortunately I wasn’t able to use the sample.
This stuff is delicious! I am trying to get better at monitoring how many ingredients are in the things I eat and have fully cut out artificial, or genetically modified ingredients. This cream cheese fits the bill and has become “our” favorite cream cheese.
I thought it was actually a pretty good Lactose Free Cream Cheese. My family on the other hand was not to excited about it, but it is mostly just for my hubby and myself because we are both lactose intolerant.
