Lemon-Cream Icebox Cake

  • 2 (8 oz.) tubs Green Valley Organics Lactose Free Cream Cheese
  • 6 oz. (half a tub) Green Valley Organics Lactose Free Sour Cream
  • 10 oz. lemon curd (one jar)
  • 1/2 cup freshly squeezed lemon juice
  • 2 tsp. cornstarch
  • 1 1/2 boxes Trader Joe’s Meyer Lemon cookies (or other thin wafer cookie) - for a 12-layer cake you will need 84 cookies


With a fork, stir sour cream, cream cheese and lemon curd together until smooth and silky.

Mix 2 tsp. lemon juice with the cornstarch.

Bring remaining lemon juice to a boil, add cornstarch mixture and boil for one minute while stirring vigorously. Let cool for 5-7 minutes, then carefully fold into cream cheese mixture.

To build the cake, place one cookie on the center of the serving plate. Place the other 6 cookies in a circle around it, with edges touching. (It helps to dab a tiny bit of lemon cream underneath each cookie to keep the cake from sliding around as you work.)

With a spatula, spread a thin layer of lemon cream over all cookies. Place another layer of 7 cookies on top of the first layer, offsetting the cookies, rather than stacking directly on top of each other. Continue layering cookies and lemon cream until cake is the height you like, finishing with a layer of lemon cream on top.

Place cake in refrigerator overnight.

A lactose-free product that does not taste lactose-free. I was happy to be able to pronounce every ingredient, many alternative cream cheeses have a full page of artificial ingredients used to mimic the texture of taste of plain cream cheese. The flavor and texture are authentic to standard cream cheese. It stands up to baking and cooking without separating or curdling. The easiest way to enjoy it on a bagel or cut veggies.


Very happy we opted to try this cream cheese! Have purchased it several times since trying... My daughter is Lactose intolerant .. she loves this!


I was skeptical of non dairy cream cheese but my family enjoyed it! We would most certainly purchase this again as it is so close to dairy cream cheese!!


I was looking forward to trying this new product in some recipes, but the Green Valley Organic Lactose Free Cream Cheese was so good on the bagels I served at my book club that it was all gone! One of the ladies in the club, who is lactose free, said she was definitely going to put it on her shopping list. I've already recommended it to others and have also repurchased it myself. Can't wait to try some dips (especially spinach/artichoke). Thanks, SocialNature, for giving me the chance to try this product!


I was unable to find this product in local stores. I would have loved to try this product, It just was not available for me. I do so apologize
