Kale Artichoke Yogurt Dip
This fresh version is a playful twist on traditional artichoke dip, without the heaviness of mayonnaise and melted cheese, but with superb and complex flavors nonetheless. Chopped kale adds leafy green nutrition to the classic combo of yogurt, lemon and garlic. Try this at your next party or potluck—we promise your guests will devour it!
Prep Time: 20 minutes
4 cups kale, chopped
1 (14 oz) can artichoke hearts, drained well and chopped
3 green onions, thinly sliced
2 tsp. garlic, microplaned
2 cups Redwood Hill Farm plain goat milk yogurt
1 tsp. freshly ground pepper
1 tsp. salt
1 Tbsp. freshly squeezed lemon juice
If desired, refrigerate dip for at least one hour, to allow flavors to develop, or serve immediately. try serving the dip in a bread bowl, which creates a beautiful and colorful contrast, and to accompany with crackers, corn chips and fresh vegetable sticks.
I received the coupon but it was not available in coupon size in any of the stores in the Denver Metro area when we live and we have large variety of stores here. I can’t comment on taste. Hope others had better luck
Both the blueberry and strawberry goat milk yogurts from Redwood Hill Farm were a pleasant surprise. They do have a bit tangier flavor compared to cow’s milk yogurts (similar to goat cheese vs other cheeses, I suppose), but it was still tasty. The texture is fairly creamy and smooth, perfect for pairing with some granola for an extra crunch,

Greek yogurt has never been much my thing but this one I would definitely do again. Rich and creamy in taste. I would highly recommend if you love yogurts!
The organic strawberry goat milk yogurt was delicious. I thought it would be more tangy but it tasted great just like normal yogurt. I would definitely recommend.
