Parmigiana Tofu

Ingredients:

  • 1 pkg Nasoya Extra Firm Tofu, or Nasoya Extra Firm Twin Pack, or Nasoya Firm Tofu
  • 1/2 cup seasoned bread crumbs
  • 5 tbsp grated Parmesan cheese
  • 2 tsp oregano
  • 2 tbsp olive oil
  • 8 oz tomato sauce
  • 1 clove garlic, minced
  • 6 oz mozzarella cheese, shredded
  • Salt and pepper

Preparation:

  1. In a small bowl, combine bread crumbs, 2 tablespoons Parmesan cheese, 1 teaspoon oregano, salt, and black pepper.
  2. Slice tofu into 1/4-inch-thick slices and place in bowl of cold water.
  3. One at a time, press tofu slices into crumb mixture, turning to coat all sides.
  4. Heat oil in a medium skillet over medium heat. Cook tofu slices until crisp on one side. Drizzle with a bit more olive oil, turn, and brown on the other side.
  5. Combine tomato sauce, garlic, and remaining oregano.
  6. Place a thin layer of sauce in an 8-inch square baking pan. Arrange tofu slices in the pan.Spoon remaining sauce over tofu. Top with shredded mozzarella and remaining 3 tbsp Parmesan.
  7. Bake at 400°F for 20 minutes.

I tried the extra firm version and it was true to the claim it was which means it takes a little bit more effort to season but in a light fry it had excellent texture in terms of its stayed together very well and mixed in with vegetables very well without breaking up

I really loved the firm tofu from nasoya it was very easy to find in the grocery isle and it was very easy to make. I would highly suggest trying it out if you haven't yet they are amazing.

This is so good in stir fry, soups, cooked in a skillet with a bunch of organic greens with liquid aminos! High protein, low to no fat, non-GMO, and cholesterol-free! You drain it and press with water out then prepare as desired size. When you cook it you use sauces and seasonings so it absorbs all the flavors! Delish!
