The scent of bacon can send even the most health-conscious of us into a hickory smoke induced swoon. Thankfully, there are many natural products out there which provide all the satisfaction and delicious taste of bacon, without the negative health consequences. Whether or not you’ve experienced ‘bacon-mania’, we’re sure you’ll love this vegan B.B.L.T., made with Hippie Snacks Coconut Bacon Coconut Chips.
Prep Time: 5 minutes
Serves: 2
Ingredients:
1 cup Hippie Snacks Coconut Bacon Coconut Chips
2 Tbsp mayonnaise
8 fresh basil leaves
4 slices of your favourite bread, toasted (we used toasted sourdough)
2 medium tomatoes (we used fresh Black Krim tomatoes)
2 large lettuce leaves
freshly ground pepper to taste
Directions:
Fold each basil leaf in half and chop finely. Combine with mayonnaise and season with freshly ground pepper, then spread onto toasted bread. Thickly slice the tomatoes and snap the lettuce leaves in half. Layer the sandwich as follows: lettuce, tomato, coconut chips, lettuce.

That looks great! I am also kind of on and off with sandwiches, but anything involving avocado and tomato is a good thing. The shitake mushroom bacon is a creative idea.
