Prep Time: 15 minutes
Cook Time: 30 minutes
Ready in 3 hours 15 minutes (includes marinating time)
Serves: 2
Ingredients:
1 bag Hippie Snacks Tamari & Cracked Pepper Coconut Chips
1 package firm tofu
2 Tbsp white or black sesame seeds
2 Tbsp wheat flour
1 egg, beaten
2 cloves minced garlic
1 tsp freshly grated ginger
2 Tbsp tamari or soy sauce
2 tsp sesame oil
1 Tbsp rice vinegar
2 tsp sriracha (or more if you like spice!)
1 Tbsp canola oil
2 green onions for garnish (optional)
Directions:
Wrap tofu in a paper towel, sandwich between two plates and place a weight on top (cans work nicely) to remove the liquid. Leave for 30 minutes in the refrigerator.
Meanwhile, prepare the marinade. Mix sriracha, tamari, sesame oil, rice vinegar, ginger and garlic in a bowl.
After 30 minutes, remove the tofu from the refrigerator and dice into 1/3 inch pieces.
Combine with the marinade and chill for 2 hours.
Lightly oil a baking sheet. Preheat the oven to 350 degrees.
Crumble or chop the coconut chips into small pieces and combine with the sesame seeds.
Dip each piece of tofu into the egg wash, flour, then roll in the coconut chip mixture. Place on the baking sheet.
Bake at 350 degrees for 20 minutes.
Garnish baked tofu with green onions, serve, and enjoy!

This was fantastic!!! Thank you for sharing this! Any tips on keeping the tofu from absorbing so much of the oil?
Yum, the crunchy coconut crust of the tofu poppers tasted delicious with the mango chili cream. This is a very tasty recipe, well worth the effort.
Just made this and it was delicious! I added some coconut extract to give it more coconut taste but even my husband liked it!
