Prep Time: 15 minutes
Cook Time: 30 minutes
Ready in 3 hours 15 minutes (includes marinating time)
1 bag Hippie Snacks Tamari & Cracked Pepper Coconut Chips
1 package firm tofu
2 Tbsp white or black sesame seeds
2 Tbsp wheat flour
1 egg, beaten
2 cloves minced garlic
1 tsp freshly grated ginger
2 Tbsp tamari or soy sauce
2 tsp sesame oil
1 Tbsp rice vinegar
2 tsp sriracha (or more if you like spice!)
1 Tbsp canola oil
2 green onions for garnish (optional)
Wrap tofu in a paper towel, sandwich between two plates and place a weight on top (cans work nicely) to remove the liquid. Leave for 30 minutes in the refrigerator.
Meanwhile, prepare the marinade. Mix sriracha, tamari, sesame oil, rice vinegar, ginger and garlic in a bowl.
After 30 minutes, remove the tofu from the refrigerator and dice into 1/3 inch pieces.
Lightly oil a baking sheet. Preheat the oven to 350 degrees.
Crumble or chop the coconut chips into small pieces and combine with the sesame seeds.
Bake at 350 degrees for 20 minutes.
Garnish baked tofu with green onions, serve, and enjoy!
