Grilled Vegetable-Tofu Panini

Ingredients:

  • 2 oz Nasoya® Extra Firm Tofu, Nasoya® Extra Firm Twin Pack, or Nasoya® TofuBaked, drained and sliced thinly
  • 1 medium zucchini, cut lengthwise into 1/4-inch slices
  • 2 large or 4 small (1/4-inch thick) red onion slices
  • 1 medium yellow bell pepper, seeded and cut into quarters
  • 2 tsp balsamic vinegar
  • 2 tbsp olive oil
  • Salt and pepper
  • 4 slices crusty white bread
  • 2 tbsp pesto

Preparation:

  1. Heat oven to 450°F.
  2. Place zucchini, onion, and pepper onto baking sheet.
  3. Stir together vinegar and 2 tsp olive oil; brush half over vegetables. Season with salt and pepper.
  4. Bake 10 minutes, then turn and brush with remaining vinegar mixture. Bake 5 to 10 minutes longer or until vegetables are tender and browned in spots.
  5. Heat panini maker or contact grill.
  6. While grill is heating, brush 1 side of each bread slice with 1 tsp oil. Spread 1 tbsp pesto on unoiled side of 2 bread slices. Divide tofu and vegetables over pesto. Top with remaining bread slices, oil side up.
  7. Place sandwiches on grill. Close grill; cook 2 to 3 minutes or until bread is toasted.

This baked tofu is great in salads or to pair it up with rice. I loved it and would definitely recommend it to anyone to at least try. You can pair this up with so many items. And it comes in flavors other than plain.

Okay so I couldn't decide what flavor to try at first, so I went with the sesame ginger which happens to be what I believe to be the best. The teriyaki came really close, but I found myself using the sesame ginger in more recipes.

"I was not able to find the product at any of my local stores. It was supposed to be at Meijer but it was not available at any of my local Meijer stores"

This tasted pretty good for tofu. I would not biy this again but that is only because I'm not a huge tofu fan. But this was still ok and more flavorful than usual tofu
